This is a backwards recipe imo but it fills the nutritional bill.
Joy of Cooking
-1952

Brown then turn off. Add a T of salt and let sit an hour.
Add 3qt water and simmer 3hrs.
Add carrot onion celery (last?)
Simmer 30 more min.
Let cool to r/t.
Strain.
Chill.
Remove fat layer.
Filter through cheesecloth twice.
Portion out in containers and freeze.

Pretty sure that's a yes.

I like the flat parts! Hubby likes the drummettes. Works out perfectly!

Also, dry brining this year for the first time (instead of traditional brine). If this works it'll change Thanksgiving forever! Dealing with the big brine bucket is a hassle.

The only thing I made for Thanksgiving was reservations...at Morrison's. Nice early seating at 3:30 before the crowds get off the slopes and we'll just take the bus up. No walk-in's on T-Day...reservation only. $36/pp. Google the menu as it looks fabulous!

So much to be thankful for with all the snow on the mountain and none in town. Maybe there won't be so many accidents in town this holiday weekend.
