This is a backwards recipe imo but it fills the nutritional bill.
Joy of Cooking
-1952

Brown then turn off. Add a T of salt and let sit an hour.
Add 3qt water and simmer 3hrs.
Add carrot onion celery (last?)
Simmer 30 more min.
Let cool to r/t.
Strain.
Chill.
Remove fat layer.
Filter through cheesecloth twice.
Portion out in containers and freeze.
